Founder

Elliott Davis raised his family on a local farm. His interest in sustainable agriculture, his love of history and the pleasure in a good cocktail inspired his vision of Mine Hill Distillery, which will produce premium spirits and take pride in all things Still Made in Connecticut™.

Builders

A team of local builders, craftsmen and merchants helped restore and adapt our 19th Century landmark, saving a central part of Roxbury’s history and creating something new and exciting.

Farmers

We are proud to support local farmers who can supply grains, fruits and botanicals as well as use our spent grain to feed heritage livestock.

Artists

We have a one of a kind Artist in Residence program for emerging artists to live and work at Mine Hill and show their art in our Roxbury Station gallery.

Mine Hill spirits deeply reflect a sense of place

Five essential ingredients make our premium spirits authentic.

Water

Native Americans believed the Shepaug River held healing powers; today our own natural spring water will be the essence of all our  spirits.

Grains & Botanicals

We are reviving demand for grains and botanicals to help farmers in our area and bring a local flavor to our spirits.

Wood

100 years ago, lumber was cut at our saw mill and stored in what is today our Barrel House.  We will use a range of barrel sizes and chars to create a unique portfolio of spirits.

Time

We will take our time to produce aged spirits worthy of the Mine Hill name.

Ingenuity

In 1872, Roxbury Station opened as part of the Industrial Revolution. In 2017, we open Mine Hill Distillery and embrace the craft spirits revolution.

A landmark destination for unique events

Mine Hill Distillery can host private events, off-sites or photo shoots at our 19th Century landmark destination. We have restored four historic buildings (totaling12,000 SF) with large and intimate spaces situated on 3.5 acres along the Shepaug River. The historic exteriors are complimented by cool, modern interiors that showcase the craftsmanship of yesterday and today. The property has plenty of parking, riverfront access and an outdoor music stage.

Mine Hill Distillery is 90 minutes from NYC and convenient to the surrounding area.
